Local Spotlight
The honor of top ramen shop went to Bincho in Tarzana, a neighborhood in Los Angeles. Renowned for its exceptional broths and expertly crafted toppings, Bincho has garnered a loyal following, particularly for its signature Bincho Tonkotsu ramen. This dish features a pork broth developed by chef-owner Toshiro Tagami, which diners describe as "rich, creamy, and full of flavor." The custom-cut noodles are designed to absorb the flavorful broth and are complemented by tender chashu pork, wood ear mushrooms, and green onions.
Another popular option is the Yuzu Chicken Ramen, which features a citrus-infused chicken broth with a gradual heat and a refreshing finish. "The flavor comes from jidori, known as the ‘wagyu of chicken’ and yuzu imported from Japan," Tagami explained. He adds that the chicken breast meat is also infused with yuzu for an enhanced taste.
Patrons rave about the handmade, pan-fried gyoza, praising their crispy exterior and dumpling-like interior.
Community Reviews
The meticulous sourcing and preparation of ingredients have not gone unnoticed. Reviewers express admiration for the attention to detail in the menu offerings. One Yelp reviewer noted, "Bincho Ramen is ‘Iron Chef’–level Japanese ramen! Everything here is flawless, from broth to noodles to toppings. Their standout, in my opinion, is the [Bincho Clear Tonkotsu] pork ramen. It’s stellar! If you don’t eat pork, try the Yuzu Chicken Ramen, a specialty that’s hard to find at most ramen shops."
